No salads for the hubby and me this week!!! Tomorrow, I’ll be assembling 30+ Thanksgiving-in-a-Jar Salads for my customers.So, thought I’d do something a bit less labor-intensive for us. Foil-baked Atlantic salmon seasoned with lemon juice, dried dill weed, and Trader Joe’s Everything but the Bagel seasoning, and it turned out “sooo good” according to my 10-year-old. Pumpkin Muffins! Vegan, organic, whole wheat, and refined sugar-free. Confession, however, I did use oil. Great flavor ... just sweet enough. And, the house smells devine! I used a date, coconut and maple syrup combo, and a cinnamon, pumpkin spice, allspice, cloves, and nutmeg combo. Next time, I’ll try them with more pumpkin and leave out the oil. Also thinking of using oat and almond flour to make them gluten-free. Once I get it right, I’ll post the recipe! 🧡🧡

We have a new Sunday ritual. We have a “snack breakfast” before run group. Then post-workout, we come home to brunch.•It’s been fun to slow things down and make big, happy breakfast bowls. We read the paper, drink tea (coffee for him) and chill.•This bowl has: Sautéed veggies,eggs +whites, avocado 🥑 , and sweet potato sautéed in butter.
