🍽 Chicken Thigh with Broccoli, Cauliflower, and Japanese Sweet Potato
▫️11 oz Chicken Thigh 🐔
▫️180g Broccoli🌳
▫️170g Cauliflower☁️
▫️250g  Japanese Sweet Potato 🍠

▫️1 tsp Pink Himalayan Sea Salt 🌊

This recipe was inspired by my brother. He and I were grocery shopping at Ralph’s over the weekend, picking up actual food (not just @halotopcreamery). Walking past the meat and poultry section, I habitually picked up the chicken tenderloins as they’re super low in fat and high in protein. My brother asked if I’ve ever cooked chicken thighs, and I said that I hadn’t but wasn’t sure if I wanted to try it. He insisted that we get chicken thighs, regardless of the fat content, so we picked it up (along with vegetables and Japanese Sweet Potatoes, of course).

 After arriving home and preparing this meal, I tasted the chicken thigh first and it tasted incredible. I hadn’t realized that having non-lean meats actually tastes amazing. I always catch myself choosing the leanest options for anything I buy, forgetting that I always end up having to eat almonds or almond butter to fill in my fats. So having chicken thigh was not a bad choice at all! I’m probably going to incorporate chicken thighs and other fattier meats into my diet over the next couple of weeks to see how it affects me.

I usually hesitate before trying new things, it’s a bad habit of mine. I would definitely say my bro is a major contributor to helping me try new things and developing new habits. Moral of the story is that it’s ok to hesitate to potential change, as long as positive change happens at the end of the day.

Siapa yg ga suka dengan nasi liwet Sunda yg biasanya disajikan di restoran-restoran daerah Jawa Barat dengan hidangan lauk lengkap seperti ikan bakar, tahu-tempe goreng, lalapan dan sambal, serta sayur asem. Yumm!

Jangan lupa kenikmatan nasinya sendiri yang kaya akan aneka rempah dan biasanya dicampurkan dengan ikan asin, seperti ikan asin jambal roti, peda, atau teri. Oh ya, nasi liwet Sunda sendiri biasanya tidak memakai santan seperti halnya nasi liwet di Solo.

Menu seenak gini pun gampang banget dibikinnya, anti ribet, dan pastinya dibuat sesehat mungkin ala Eyi 😆 Iyap, tinggal cemplang-cemplung semua bahan ke dalam magic com, lalu voilaaaaa.... mateng dengan harum semerbak memenuhi dapur! .

Bahan :
250 gr beras, cuci bersih (aku pakai campuran beras coklat + beras hitam dari @wilujeng.organic).
2 batang serai, memarkan
5 daun salam
8 butir bawang merah, iris tipis
5 siung bawang putih, iris tipis
5 buah cabe (optional)
1 ruas lengkuas memarkan
250 gr ayam cuci bersih (usahakan  bebas lemak
Air secukupnya
1 ruas jahe iris tipis
sea salt/garam secukupnya
2 sdm minyak kelapa untuk menumis
1 genggam kemangi
50 gr teri medan/ikan asin jenis lain

Cara Membuat :
1. Rebus potongan ayam dengan jahe dan garam hingga ayam lunak, buang bagian atas air rebusan yg berlemak. Sisihkan.
2. Panaskan minyak, tumis serai, daun salam, bawang merah, bawang putih, dan lengkuas hingga harum. Angkat dan tiriskan.
3. Rendam ikan teri dengan air panas, tiriskan.
4. Masukkan beras ke panci magic com beserta tumisan bumbu dan ikan teri, kemudian tuang ayam beserta air rebusan sesuai takaran beras. Masak hingga matang.
5. Masukkan daun kemangi, aduk hingga tercampur rata. Masak sekali lagi agar nasi tanak.
6. Setelah matang, aduk kembali. Nasi siap dihidangkan hangat-hangat.
