List the_organic_heart's Instagram Thai vegetable curry noodle bowl with crispy shallots  There is nothing more comforting than noodles, curry and soup and this recipe combines all three of those  2-3 servings:

Vegetable curry sauce:
1 tbsp coconut oil 
3 cups mixed vegetables - mushrooms, green beans, egg plant, bell peppers, carrots
1 tsp fresh grated ginger 
1 can light coconut milk
2 tbsp red curry paste 
1 tsp chili paste (or more if you want it spicy)
1 tbsp coconut aminos 
2 tsp honey 
Crispy shallots:
1 cup shallots, thinly sliced 
1 tbsp coconut oil 
Dash of salt 
Pad Thai rice noodles (about 2-3 ounces per person)

Serve with fresh cilantro and sriracha sauce 
Directions:

In a small pot or Dutch oven add 1 tbsp of coconut oil and sauté the vegetables a few minutes. Add in the ginger, coconut milk, curry paste, chili paste, aminos and honey. Bring the curry to a boil then reduce the heat to low, cover the pot and allow it to simmer for 20 minutes.

For the crispy shallots heat 1 tbsp of oil in a skillet then add in the thinly sliced shallots. Sauté until crispy - about 8 minutes. Season with salt and set aside.

Cook your rice noodles according to the package. Once the rice noodles are cooked drain them then put the noodles at the bottom of a bowl. Top the noodles with the vegetable curry, crispy shallots, fresh cilantro and sriracha sauce. Enjoy! 1627264197086070049_1249672167

2cups cashew butter (or nut butter of choice)
3/4 cup coconut flour
1/4 cup raw honey
2Tbs milk of choice (I used almond)
2 scoops protein powder of choice I used #orgain organic peanut butter protein
2Tbs of sprinkles (optional)

Mix all ingredients (except sprinkles) until fully incorporated, fold in sprinkles if using. If your dough is too sticky refrigerate for 15min, then roll into balls.

Crust
3/4 cup raw almonds
1/2 cup shredded coconut
1/2 cup raisins
2 teaspoons water

Grind the coconut and nuts to fine crumbs in a food processor. Add the raisins and process until broken down. Add the water. Press the mixture into a 6" or 7" spring form pan OR 5-6 large silicone muffins molds.

Filling
1 1/4 cups cooked pumpkin purée
1 cup raw cashew pieces 
1/2 cup water 
1/3 cup maple syrup 
2 teaspoons cinnamon 
1 small piece fresh ginger 
1/4 teaspoon nutmeg 
1 teaspoon cinnamon 
1/2 cup + 2 tablespoons melted coconut oil
.
⏩⏩Instructions
Blend all but the coconut oil until smooth in a blender. Add the oil and blend again. Taste. Add a bit more syrup/spices if desired. Freeze for at least 8 hours and then place in the fridge until thawed.
