With Thanksgiving only FOUR days away, trust me when I say you should DEFINITELY add this dish to your menu.Sweet Potato Casserole.Ingredients for Casserole.3 1/2 lbs sweet potatoes.1 large egg.1/3 cup maple syrup.1 tsp vanilla extract.3 tbsp Ghee softened.Dash Cinnamon.1/4 cup almond milk.Ingredients for Topping.1 1/3 cups chopped pecans.2 tbsp almond flour.2 tbsp maple syrup.1/2 tsp Cinnamon.1/8 tsp nutmeg.1/8 tsp salt.2 tbsp Ghee, melted.Directions.1. Preheat oven to 350.2. Peel and cut sweet potatoes into chunks. Place in pot and cover with water. Bring to boil. Boil until completely soft (you can easily pierce it with fork) then drain.3. Use an mixer or masher to mash potatoes. Add milk, syrup, Ghee, vanilla and egg and blend well. If it seems to thick add more milk.4. Transfer mashed potato mixture into a greased 9x13 pan.5. Combine topping ingredients into a bowl and mix well. Cover top of the potatoes with the toppings, spreading it evenly across the top.6. Bake for 25 minutes. Allow to set for 5 minutes before serving. Serve warm..Let me know what you think! I made it for dinner tonight and it was the BOMB
