BANANA, RASPBERRY & GINGER BREADHere’s a little festive twist on my refined sugar free and deliciously moist banana bread recipe.2 cups self raising flour2 bananas, mashed2 eggs1 teaspoon vanilla bean paste1/2 cup milk, can sub almond for #dairyfree3 heaped tablespoons rice malt syrup2 tablespoons oil, sunflower, coconut (melted) or similar1 teaspoon cinnamon1 teaspoon ground ginger1 punnet raspberries.Preheat the oven to 180•c. Add wet ingredients into a bowl first, whisking then add the dry ingredients and give it a good stir until combined. (If you used large bananas you may be required to add a few tablespoons extra milk)Line a loaf tin with baking paper and pour the mixture in. Home from a weekend of skiing and family time and craving fruits and veggies. Did ok getting some in at each meal but no matter what when I’m away from home, I come back wanting a smoothie and a salad. Luckily my freezer was stocked with frozen, overripe bananas and some bluebs. Added some milk, unflavored protein, and peanut butter for a treat for me and Little Man.
