Spinach salad with grilled chicken, red peppers, cucumbers, carrots, and avocado. Ranch made w Greek yogurt as dressing. My body was very thankful for this. Trying to do everything o can to avoid this terrible flu going around. Hopefully all these nutrients (plus excessive hand washing) will help. 🤞🤞Plenty of left overs for later this week too!

Chicken sausage, roasted asparagus, brown rice w quinoa and half an avocado. • • • My macros were a bit unbalanced before dinner last night- light on the fat so I had a fattier dinner to even it out (twist my arm 👻).

Egg Cups! These were delicious. I made them once in the past and completely forgot about them until now. Great for breakfast on the go (aka sitting Chicago traffic 😕) • • • I used 2 eggs and 2 egg whites- red pepper, onion and tomatoes chapped up tiny, a little salt and pepper and a pinch of shredded cheese on top. I eat 2 for breakfast.

Salad for lunch again- surprise surprise 😜-plus string cheese stick and some celery. Used delicious Greek yogurt ranch dip from Mariano’s on my salad . Not quite as healthy as my homemade dressing but what can I say, I’m a Midwesterner. 🤷🏻‍♀️

“All the things” salad! 🥗 I’ve been on a salad kick recently. In this salad I’ve got grilled chicken, 1 piece of bacon red peppers, cucumbers, onions, half a hard boiled egg then I added a dressing Harrison made w avocado oil, dijon mustard, rice vinegar and hot sauce. 🥚 🥚 I also can’t get enough of these hard boiled eggs. I’m a lazy pos and buy the pre-boiled ones at the store bc I hate peeling them myself and they are great!

Christmas tiiime!! These wreaths are my go-to’s every year. Potato breakfast scramble. Potatoes, red, yellow and orange pepper, onion, tomatoes and sausage. 🥔 🥔 🥔 * I love waking up and making a big breakfast on the weekends. I made a huge portion this morning so it will last all weekend. Good thing I ate a healthy breakfast bc I’ve been eating junk while watching football all day 🍕🍻🏈🤷🏻‍♀️

Dude. These potatoes. 🤩 Got this recipe from @behealthiful - you weren’t kidding- these were so delicious and easy. Paired w tofu and left over veggies was a perfect meatless meal-which I have been working on adding to my dinner repertoire.

Curry chicken, steamed broccoli, rice and frozen peppers and onions. * * * On nights that I don’t feel like cooking @traderjoes premartinated meat selection is the best. Just open it up, throw it in a pan and voila! Add a couple of healthy sides and you’ve got a great home cooked meal in minutes. The frozen peppers and onions are great to keep on hand - @traderjoesmusthaves

Tofu stir fry. I caved and used store bought sauce, oh well 🤷🏻‍♀️. I love tofu but this was my first time ever cooking it myself. The texture turned out great but the taste was a bit bland. Need to marinate it next time.

Tomorrow’s menu: Breakfast-Overnight protein oats Lunch-Salad w shredded chicken and homemade dressing (olive oil, apple cider vinegar, salt, pepper, garlic powder and lemon juice) Snacks-string cheese 🧀 😍and veggies I like to pack everything for breakfast and lunch before bed😴 bc I’m a useless zombie in the am. 🧟‍♀️I’ll make something fresh for dinner and then usually pack up left overs for lunch the next day. Tonight dinner was chicken tacos and turned into chicken salad for tomorrow’s lunch!

The holiday weekend is over and that means no more being spoiled by my awesome parents and the end of unlimited amounts of amazing food. 😕aaanndd back to the city means back to walking around in the cold 😫🧣❄️🌬and I am once again in the mood for soup and chili and all things warm. I made some “homemade” ramen. Used regular store bought noodles and added veggies and some of my own spices. This is a comfort food to me that brings me back to college 📚Back to the real world tomorrow!
