Having time off to enjoy one of my favorite states and one of my favorite non-running activities has been such a blessing. It’s been an all-out tiring two days on the slopes, y’all! I know a lot of people have some strong opinions about nutrition, but I like to keep my nutrition as on point as possible while we’re on vacation. Not to say we don’t cut corners here and there, but I feel a lot better physically and mentally when I at least keep some things consistent: fruit, veggies, and my @perfectbar! Y’all, these bars fueled me through marathon training, my long work shifts as a nurse, and recently, out here on the slopes! Looking for a good nutrient-dense snack? Green smoothie! Heal bone faster? I've had a wonderful day so far and it all started with this jar of OVERNIGHT OATS I whipped up last night 😍 I loved being able to have a homemade, delicious breakfast straight out of the fridge since I was feeling uber lazy this morning 😴 I've never tried overnight oats because I thought they would be too liquid-y for my taste but these were THICK and delicious (recipe at the end!) ⭐️⭐️⭐️ after that I had 2 classes this morning, hit the gym with a great workout, went to the library to get my weekend's homework done, and now I'm headed home 💪🏻 I hope you all are having a great friday 🌸 RECIPE: 1/2 cup old fashioned rolled oats, 1 tbsp chia seeds, 1 tsp maca powder, 1/2 chopped banana, and unsweetened vanilla cashew milk until everything is covered then mix and throw it in the fridge! This morning I microwaved it for 1 minute and added a spoonful of creamy almond butter 🍯 definitely going to be a staple breakfast for me from now on! • • • #eattorun

Doing a lil dance because it’s FRIYAY! If you saw my stories, you know that I had an awful wake up call around 4:15, but that’s not gonna rain on my parade! So many of you asked for my homemade granola recipe and here it is!! I’ve been on the hunt for a granola made WITHOUT coconut sugar...not because I think it’s “bad” but because I’m being very conscious of my sugar intake rn! This is sweetened with honey, but feel free to use dates! • • Homemade coconut cashew granola: • 1/2 cup raw cashews • 1/4 cup pumpkin seeds •3/4 cup @bobsredmill rolled oats • leftover nut milk pulp (or blend some extra cashews for a sticky texture) • 3 tbsp @goodmixfoods superfood blend • 3 tbsp @madhavasweet honey • 2 scoops @vitalproteins coconut collagen creamer • cinnamon & pinch of sea salt Preheat oven to 375 degrees. Mix all ingredients in a bowl (should be a sticky texture, but spreadable). Spread mixture on baking pan & bake for 15 minutes, then mix It around & bake for an additional 10 minutes. Store in a jar in the fridge & enjoy!!

Dite che devo lavorare anche sulla varietà nei pranzi, vero? 😅 Mi ero detta : no vabbè, non lo pubblico, è inguardabile questo piatto, tutto accrocchiato e buttato la! Però no, vi dovevo mostrare, che non si può, cambiare gli altri, se prima non siamo capaci di riconoscere in noi stessi la debolezza. Non si può sostenere una persona che zoppica se già noi, stiamo con le stampelle, no? Volevo aspettare di finire la sfida delle colazioni, prima di mettermi alla prova ulteriormente, ma non ho molta voglia di aspettare, e quindi ve ne propongo un altra : almeno una volta al giorno, provate a fermarvi e pensare ( profondamente se necessario, respirando molto bene ) a che cosa desiderate veramente. Ascoltate il vostro corpo, dalla punta dei piedi fino alla cima della testa. Ascoltate i pensieri e ignorateli, se potete. Create un canale libero tra la mente e il corpo, proprio come se fosse una lunga autostrada bloccata al transito, per far passare una sola macchina. Se riuscite a fare questo esercizio, almeno una volta al giorno, scrivete ogni volta su un piccolo pezzo di carta, o meglio, su un quadernino, le sensazioni provate, ma soprattutto, quello che vi ha comunicato il vostro corpo. Brutto o bello che sia. Vi piace come prova? Io era da un po’ che ci pensavo, ma ho sempre rimandato, oggi forse prendo coraggio, almeno per dare il buon esempio! 😂 ( ai fagioli ancora non so rinunciare, perdono )
