Chicken filling:

1 tab red masala ,1/2 tsp chicken spice, Salt, pepper and 1/2tab lemon juice. 
Sauté one onion(thinly sliced) then add chicken and cook till water almost burns out. Add about 1/2 to 3/4 tin tomato and onion mix or tomato purée and 2tab  steers peri peri. Let it simmer. Set aside 
Make a basic white sauce(butter,flour,milk,salt and pepper)

Layer in a casserole- Sauce, sheets, sauce,filling,sheets and repeat till you get to the top-ending with the white sauce. Sprinkle cheese and bake at 180degrees for 30-45min.Enjoy 1627760075060242040_1925762618

1 big packet big Korn bites (brown packet)

Half onion

1 small tomatoe

Half cup of robot peppers

1 jalapeño

Few olives

3T vinegar

Half cup of chilli tomato salsa or any other chilli sauce

3 T cream cheese

Half cup grated cheese

Method:

Prepare a fine salad with the onion , tomato , peppers, jalapeños and olives.  Add the vinegar to this and set aside.

Layer the big Korn bites, topped with the cheese and cream cheese .

Place in a heated oven for approximately 10 minutes.. I prefer the oven since it gives the crisps an extra crunch.  Be careful not to burn the crisps.

Once the cheese has melted assemble the other ingredients...as follows

A few dollops of the chilli sauce, the salad scattered over the entire plate of crisps.

Top with chopped chives and drizzle of chilli mint yoghurt sauce...optional (half cup yoghurt, chopped mint, 1 T mayonnaise, 1 t sugar , 1 green chilli)

Scone:
4 cups flour 
4 tblsp sugar(can omit 2 tblsp)
1/4 tsp salt
8 tsp b.powder
1&1/2 cups sour milk
2 eggs

Add flour, sugar, salt & baking powder to bowl. Rub butter into dry ingredients. 
In a separate bowl beat sour milk & eggs. Pour onto flour mix. With fork bring dough together. Dont overwork dough.
Take 1/2 the dough & gently press into greased pyrex(use floured hands to work with dough). Add cooked chicken mince & spread over dough. Top with grated cheese. Use remaining dough & gently pat to cover pyrex. Egg wash & bake @170 for 40 minutes.

Liquidise: 
1 small bunchdhania/Half green pepper
2 green chillies 
4 big cloves of garlic 
1 tsp jeeru 
1 tblsp coconut 
1 tblsp flour 
1 cup milk 
Salt 
In a bowl, mix: 
500ml yoghurt 
1 mug milk 
Dhania chutney 
In a pot: 
Add 2 tblsps ghee,1/2 tsp jeeru whole and half an onion (finely sliced) and saute till soft and transparent. Pour in yoghurt mix, add 1/2 tsp arad and whisk constantly till it comes to a boil. You must mix it continuously otherwise it can split. Add curry leaves close to the end 
Once boiled, adjust salt. Add more yoghurt if you require more tartness. Add more milk if you require less tartness or a thinner khuri. Blacken 1 tsp of jeera in a dry pan and add to the khuri. 1627758734720048779_1925762618

250g butter
1 1/2 cup castor sugar
2 tblsp oil
Vanilla essence
*beat on high speed till white & fluffy (scrape the bowl occasionally so it's all mixed well)*
Then add in 4 eggs (one at a time)

3 cups flour
4 level tsp baking powder *sieve both the dry ingredients 3 times*
1 1/4 cup milk

Add the milk and flour alternatively ending with the flour 
Mix well till no flour lumps are seen

Pour the cake batter into 2 greased 9" round pans & bake until the tester comes out clean & golden brown
Remove the cakes from the pan & transfer onto a cooling rack to cool completely 
Sandwich the cakes with buttering & decorate as desired 
Butterceam 
250g butter (hard)
1 tsp vanilla essence
*beat the butter & icingsl sugar till pale,stirring the bowl occasionally with a spatula*
500g sifted icing sugar 
2 tblsp cold milk
*beat again on high speed till smooth*
Add gel colours if desired

Beef strips recipe-Fatima 
Pita pockets 
2 cups cake flour
1 tspn salt
4 tspn sugar
1tspn yeast
1 tbslp oil 
1tblsp ghee
Half a beaten egg
Warm water and milk mixture.
Bind into soft and pliable dough
 Let it rise till its  double. Make 8 balls and roll  a lil oblong a size orlf a saucer let it rest for 15 mins and cook like naan on a tawa on medium heat.

Beef strips by Fatima

Cut beef fillet into thin strips *marinate in aminas steak & chops marinade for a few hours or overnight*

The next day heat some oil and cook the steak till tender 
Then add in 
Nandos peri peri sauce
Garlic sauce
Siracha sauce
Salt to taste
Chili powder to taste
Aromat
Garlic powder
*cook for a bit till mixed well*

In a separate pot,take some butter and add in sliced mixed peppers and cook through till soft,do the same with sliced onion too!

Add the peppers & onions to the steak and mix well

If you want it saucy add in bisto powder mixed with water at the end and heat it through

Cut the pittas in half
Put lettuce
Ketchup/mayonnaise

In a pot add:
1 small onion or 1/2 a large onion - sliced
1 green Chilli - slit
Approx 1 tsp Jeera (cumin seeds)
Some curry leaves
Fry this until the onions start to change color.
Now add:
1/2 tsp ginger garlic 
3/4 tsp crushed garlic
Fry for 2 minutes.

Add into the onions:
Half a tin of tomato purée ( or u can add grated tomato and a few tblsp of tomato a puree)
Salt to taste
1/2 tsp to 1 tsp Chilli powder
1/4 tsp Arab (turmeric)
1/2 tsp crushed dhana
1/2 tsp crushed Jeera
1/4 to 1/2 cup water - just so it's not too thick
Approx 4-5 tblsp of tamarind water/ amli ( to make this - soak a piece of tamarind/ amli in boiling water and then strain) set the remainder of the amli water aside to make a salad to serve with the meal.

Once the tomato starts to cook add into it 1 tin of chick peas ( I drain the water out of it)
Mix and taste- adjust spices as well as add more of the amli if you need to.
Close pot - cook for about 10 minutes.
Chop some fresh dhania/coriander into it.

Serve with pieces of fried samoosa pur and amli salad.

To make the amli salad:
Take the remained of the water from the soaked amli and add into it some finely sliced onion, pieces of green Chilli and chopped fresh coriander.
