ROASTED SQUASH, CARAMELIZED FIG & FETA SALAD. I've made this salad 3 times this fall and it's been delicious every time. It's a perfect holiday salad because it has a touch of decadence.⠀⠀Ingredients you need:⠀- 1/2 acorn squash, sliced⠀- seeds from 1/2 a pomegranate- 2 Tbsp of olive oil ⠀- 1/4 C raw honey⠀- 1.5 Tbsp of fresh thyme leaves⠀- 8 figs, sliced med size (not thin)⠀- 3 C of arugula⠀- small package of goat cheese⠀⠀Dressing:⠀- 1/4 C of your best olive oil⠀- 2 Tbsp of lemon juice⠀- 2 Tbsp of apple cider vinegar⠀- zest from one orange- 1/2 Tbsp of thyme leaves⠀- s & p to taste⠀⠀Preheat the oven to 425oF. Cut your squash in half, then take one half and slice it (not too thin otherwise it will burn in the oven). Toss the sliced squash, 2 Tbsp of olive oil, honey, 1.5 Tbsp of thyme leaves and some salt. Pour onto a parchment lined baking sheet and put it in the oven for 15min or until the squash is semi-soft. Be sure to check it every so oven and give it a good toss so they are cooked evenly. ⠀⠀For the dressing, simple whisk all the ingredients together and set aside.⠀⠀Then take squash out of the oven and toss in the sliced figs. Put back in the oven for 6 to 8 min. Take out of the oven and let the squash & figs cool down a bit. Place the arugula in a dish, put the squash and figs on top, top with the goat cheese & pomegranate, pour dressing on top...and voila! You have an entertainment worthy salad⠀⠀⠀
