Orange Healthy Recipes:
Fancy Fruity Pizza
1/3 cup melted butter, Smart Balance, or Earth Balance
12 to 15 whole graham crackers, coarsely crushed
1/4 cup raw stevia granules
Preheat oven to 375 degrees Fahrenheit.
Melt the butter in a small saucepan.
In a medium-sized bowl or a food processor, combine the graham crackers, stevia, and melted butter, and blend until it resembles coarse meal. Press the mixture into a shallow glass casserole dish. Try to make the crust even at about 1/8 inch with no sparse spots.
If the crumb mixture won't stick where you press them, add a tablespoon of water to the mix. Chill for one hour (to prevent it crumbling when you serve it), then bake for 8 to 10 minutes. The edges should be just slightly browned, but not over-brown. Remove from oven and allow to cool.
The topping Ingredients:
8 oz. cream cheese, softened
1/4 cup stevia granules
1/2 tsp. real vanilla extract
2 cups fresh orange sections
1 cup fresh strawberry halves or quarters
1 cup fresh or frozen blueberries
3-4 kiwifruits, peeled and sliced
In a small bowl, beat the cream cheese, stevia, and vanilla with an electric mixer on medium speed until fluffy. Spread mixture over the cooled crust.
Arrange the fruit over the cream cheese with the oranges on the outer section (or any way you'd like). Refrigerate until chilled, at least 1 hour.
Before serving, loosen pie crust from pan by dipping just the bottom into hot water for a few seconds, then cut into wedges or squares. Store in the refrigerator.
